Our Autumn Pumpkin soup comes together in less than a half hour for a perfect blend of sweet and savory.

Ingredients:
2 tablespoons olive oil
½ cup finely chopped onion
2 cups low-sodium chicken broth
1 ½ cups LACTAID® Fat-Free Lactose-Free Milk
1 ½ cups canned pumpkin
2 tablespoons brown sugar
½ teaspoon salt
¼ teaspoon nutmeg
1 teaspoon lemon juice
- Heat olive oil in a 2 ½-quart saucepan. Add onion and cook for about 2 minutes.
- Add chicken broth, LACTAID® Fat-Free Lactose-Free Milk, pumpkin, sugar, salt and nutmeg. Bring to a boil and simmer for 15 minutes.
- Add lemon juice and serve while warm.
