Cream of Onion Soup

This soup recipe quickly comes together in 30 minutes. It’s a great balance of sweetness from the sauteed onions and creaminess from our LACTAID® Fat-Free Lactose-Free Milk!

Ingredients:
2 tablespoons canola oil, divided
6 medium onions, thinly sliced
4 tablespoons all-purpose flour
2 cups low-sodium chicken stock
½ teaspoon salt
¼ teaspoon pepper
¼ cup finely cut green onions
- Heat 1 tablespoon of canola oil in a frying pan, and sauté onions for about 3 minutes. Set aside.
- In a soup pot, heat 1 tablespoon canola oil, add flour and whisk together.
- Add LACTAID® Fat-Free Lactose-Free Milk, chicken stock, sauteed onions, salt, and pepper. Cook for 15 minutes.
- Add green onions, stir to blend and serve.
