For the Waffles

4 large egg whites

2 tablespoons maple syrup

2 cups gluten-free waffle mix

¼ teaspoon kosher salt

For the Assembly

For the Waffles

  1. Heat a waffle maker to the medium-high setting.
  2. In a large bowl, whisk together the pitaya, LACTAID® Reduced Fat 2% Lactose-Free Milk, egg whites, maple syrup, waffle mix and salt. Allow the batter to stand for 2 minutes to thicken.
  3. Pour a cup of the batter onto the waffle maker and close the lid. Cook the waffle until puffed and golden, about 2 minutes.
  4. Transfer the waffle to a platter and continue to cook the rest of the waffles.

For the Assembly

  1. Place one waffle on a plate and top with berries and a sprinkling of powdered sugar.
