Soft Pretzel Bites

Light, soft, and lactose-free, these pretzel bites paired with our honey mustard dip are an ideal appetizer for any occasion. They’re casual, comforting, and easy to love.

Ingredients

For the Pretzel Bites

¾ cup water, warmed to 110° F

1 tablespoon granulated sugar

2 ¼ teaspoons instant yeast

2 cups all-purpose flour

2 cups bread flour

½ cup LACTAID® Sour Cream

1 teaspoon kosher salt  

For Boiling

8 cups water

½ cup baking soda

For Topping

Egg white

Coarse pretzel salt

For the Honey Mustard Dip

½ cup LACTAID® Sour Cream

2 tablespoons honey

2 tablespoons Dijon mustard

¼ teaspoon kosher salt

Other Tools:  Stand mixer with dough hook

Directions

For the Pretzel Bites

  1. In the bowl of a stand mixer fitted with the dough hook, combine the water, sugar, and yeast.  

  2. Add in the flour, LACTAID® Sour Cream, and salt. Mix on medium high speed for about 5 minutes until smooth and pass the windowpane test. For the windowpane test, tear off a small piece and carefully spread it out to see if you can see the light through it without it tearing. If it tears, mix for another minute or two and check again.

  3. Place the dough in a large, lightly greased bowl, cover, and proof overnight in the fridge or in a warm environment for about one hour or until doubled in size.

  4. Once the dough has been proofed, line a baking sheet with parchment paper. Line a second baking sheet with ten individual parchment squares, measuring 4”x4”.

  5. Divide the dough into fourths and roll each into long ropes about 1-inch thickness. Cut each rope into 1-inch pieces. Place 5 pieces on each parchment square.

  6. Cover the pretzel bites and proof for about 30 minutes.

  7. Meanwhile, preheat the oven to 425° F, and bring a pot of water to a simmer.  

  8. Once the pretzel bites have been proofed, turn the water down to low heat and slowly add the baking soda.

  9. Bathe the pretzel bites (about 2 parchment squares at a time) for 30 seconds on each side, then place on a baking sheet lined with parchment paper.

  10. Brush the pretzel bites with egg white and sprinkle with coarse salt.

  11. Bake for about 10 minutes until deeply golden.  

For the Honey Mustard Dip

  1. In a small bowl, combine all ingredients and mix until smooth.

  2. Transfer to a small serving bowl and enjoy with the soft pretzel bites.
