2 medium potatoes, scrubbed and chopped
2 tablespoons chopped onion
1 tablespoon olive oil
1 teaspoon salt
1/8 teaspoon cayenne pepper
1 teaspoon chopped parsley
2 cups low-sodium chicken broth
2 cups LACTAID® Fat Free Milk
- In a medium saucepan, cover potatoes with water and boil until they are tender. Drain; set aside.
- In a small frypan, saute onion in olive oil for 2 minutes.
- Add onions, seasonings, chicken broth and LACTAID® Fat Free Milk to potatoes. Simmer slowly for about 6 minutes. Stir occasionally.
