2 tablespoons olive oil

,

½ cup finely chopped onion

,

2 cups low-sodium chicken broth

, ,

1 ½ cups canned pumpkin

,

2 tablespoons brown sugar

,

½ teaspoon salt

,

¼ teaspoon nutmeg

,

1 teaspoon lemon juice

Directions
 
  1. Heat olive oil in a 2 ½-quart saucepan. Add onion and cook for about 2 minutes.
  2. Add chicken broth, LACTAID® Fat-Free Lactose-Free Milk, pumpkin, sugar, salt and nutmeg. Bring to a boil and simmer for 15 minutes.
  3. Add lemon juice and serve while warm.
