Shredded asian coleslaw with cabbage

2 tablespoons sugar

3 tablespoons apple cider vinegar

1/4 cup hot water

3 tablespoons mayonnaise

3/4 teaspoon salt

1/2 teaspoon black pepper

8 cups shredded cabbage

1 cup carrots, peeled and grated

1/2 cup green onions, finely chopped

  1. Measure the LACTAID® Cottage Cheese, sugar and vinegar into a food processor or blender.
  2. Add the hot water and process until mixture is smooth (about 1 minute).
  3. Pour mixture into a medium bowl, whisk in mayonnaise, salt and pepper and set aside.
  4. In a large bowl, toss the cabbage, carrots and green onions together. Stir in prepared dressing.
