Green Goddess Pasta Salad

Ingredients

For the Green Goddess Pasta Salad

12 ounces short pasta such as fusilli, penne, or farfalle

2 cups spinach leaves, roughly chopped

1 cup chopped cucumbers

1 cup pitted green olives, sliced

1 cup grated parmesan cheese

½ cup chopped green onions

¼ cup chopped basil leaves

For the Green Goddess Dressing

1 cup LACTAID® Sour Cream

½ cup mayonnaise

1 cup basil leaves

¼ cup chopped chives

3 tablespoon tarragon leaves

Zest of half a lemon

2 tablespoon lemon juice

2 garlic cloves

½ teaspoon sea salt, more to taste

¼ teaspoon cracked black pepper, more to taste

Other Tools: Food processor or blender

Directions

For the Green Goddess Pasta

  1. Bring a large pot of salted water to a boil and cook pasta until al dente. Refer to packaging directions for timing. Drain and rinse well under cold water.

  2. While the pasta cooks, add all the dressing ingredients into a food processor or blender and mix until smooth. Taste and season with more salt and pepper as needed.

  3. In a large bowl, toss cooled pasta, spinach, cucumbers, olives, parmesan, green onions, basil, and green goddess dressing until well combined. Add salt and pepper to taste.

  4. Feel free to garnish with basil and green onions. Then you’re all set to serve and enjoy!
