This white chocolate topping is delicious spooned over mangoes. It would go equally well with fresh peaches, papayas, strawberries, or other berries.

Ingredients

1 package (4 serving size) white chocolate or vanilla instant pudding mix

, ,

1 teaspoon vanilla

,

3 medium mangoes*

,

½ (8 ounce) tub non-dairy frozen light whipped dessert topping, thawed

,

2 tablespoons chopped pistachios

Directions
 
  1. In a medium mixing bowl prepare pudding mix according to package directions using the 1 ¼ cups LACTAID® Reduced Fat 2% Lactose-Free Milk. Stir in vanilla. Set aside.
  2. Seed and peel mangoes. Cut fruit into wedges. Divide fruit among six chilled dessert bowls.
  3. Fold whipped topping into pudding mixture; spoon over fruit. Top with chopped pistachios.
Notes

* Can substitute 3 medium mangoes with 6 medium peaches.
