Delicious Cream of Carrot Soup
This cream of carrot soup is both delicious and easy to make!
2 pounds carrots, peeled and coarsely chopped
½ cup chopped onion
½ cup chopped celery
Canola oil spray
2 ½ cups low-sodium chicken broth

LACTAID® Fat-Free Lactose-Free Milk
- In a oil-sprayed 4-quart saucepan, sauté carrots, onions and celery for 10 minutes.
- Add chicken broth and bring to a boil. Simmer for 20 minutes. Remove from heat, and cool for 10 minutes.
- Using either an immersion blender or an electric blender, blend until smooth. Put back into saucepan.
- Stir in LACTAID® Fat-Free Lactose-Free Milk, and cook until thoroughly heated (but do not boil).
