Ingredients: 2 medium potatoes, scrubbed and chopped; 2 tablespoons chopped onion; 1 tablespoon olive oil; 1 teaspoon salt; ⅛ teaspoon cayenne pepper; 1 teaspoon chopped parsley; 2 cups low-sodium chicken broth; 2 cups LACTAID® Fat-Free Lactose-Free Milk

Ingredients

⅛ teaspoon cayenne pepper
1 teaspoon chopped parsley
2 cups low-sodium chicken broth
2 cups LACTAID® Fat-Free Lactose-Free Milk

Directions

1.
In a medium saucepan, cover potatoes with water and boil until they are tender. Drain water and add back to saucepan. Set aside.
2.
In a small frying pan, sauté onion in olive oil for 2 minutes.
3.
Add onions, seasonings, chicken broth and LACTAID® Fat-Free Lactose-Free Milkto drained potatoes. Simmer slowly for about 6 minutes, stirring occasionally.
