Waffles with Pitaya Fruit

How to host brunch for your favorite people: whip up a batch of these lactose-free and gluten-free waffles made with pitaya fruit! These bright, pink waffles are made with 100% real milk, just without the lactose, so you can impress your guests with delicious fluffy waffles and no discomfort.
For the Waffles
4 large egg whites
2 tablespoons maple syrup
2 cups gluten-free waffle mix
¼ teaspoon kosher salt
For the Assembly
Raspberries
Blackberries
Strawberries, sliced
Powdered sugar
For the Waffles
- Heat a waffle maker to the medium-high setting.
- In a large bowl, whisk together the pitaya, LACTAID® Reduced Fat 2% Lactose-Free Milk, egg whites, maple syrup, waffle mix and salt. Allow the batter to stand for 2 minutes to thicken.
- Pour a cup of the batter onto the waffle maker and close the lid. Cook the waffle until puffed and golden, about 2 minutes.
- Transfer the waffle to a platter and continue to cook the rest of the waffles.
For the Assembly
- Place one waffle on a plate and top with berries and a sprinkling of powdered sugar.
