How to host brunch for your favorite people: whip up a batch of these lactose-free and gluten-free waffles made with pitaya fruit! These bright, pink waffles are made with 100% real milk, just without the lactose, so you can impress your guests with delicious fluffy waffles and no discomfort.

Pitaya Waffles made with Lactaid®

Ingredients

(3.5-ounce) pitaya smoothie packs

large egg whites

maple syrup

gluten-free waffle mix

kosher salt

Garnish

Raspberries
Blackberries
Strawberries, sliced
Powdered sugar

Preparation

Heat a waffle maker to the medium-high setting. In a large bowl, whisk together the pitaya, LACTAID® 2% Milk, egg whites, maple syrup, waffle mix and salt. Allow the batter to stand for 2 minutes to thicken.

Pour a cup of the batter onto the waffle maker and close the lid. Cook the waffle until puffed and golden, about 2 minutes. Transfer the waffle to a platter and continue to cook the rest of the waffles.

To serve, place one waffle on a plate and top with berries and a sprinkling of powdered sugar.
