Ingredients

Ingredients for the hash:

Ingredients for the eggs:

For assembly:

(8 1/2-inch) flour tortillas
1⁄4
c
green onions, chopped
1⁄4
c
cilantro, chopped

Preparation

  1. Preheat oven to 425 degrees.
  2. In a large cast-iron skillet, warm oil and butter over medium heat. Add onions and cook until translucent, about 6 minutes. Add garlic and spices and cook, stirring constantly, for one minute until fragrant. Add sweet potato and toss to coat. Salt and pepper to taste, and roast until cooked through, stirring occasionally, about 30 minutes.
  3. In a large bowl, whisk together the eggs, Lactaid 2% Milk and turmeric. Heat the butter over medium-low until foamy. Add the eggs and cook slowly, pulling a spatula from the outside of the pan towards the center to make fluffy curds. When eggs are done set aside.
  4. To assemble, lay a tortilla flat and layer it with eggs, hash, green onions and cilantro. Wrap and slice in half. Serve immediately.
