Ingredients

For the Hash

2 tablespoons coconut oil

2 tablespoons butter

,

½ cup onion, diced

,

2 cloves garlic, diced

,

½ teaspoon cumin

,

¼ teaspoon cinnamon

,

¼ teaspoon cayenne

,

3 cups sweet potato, diced

,

Salt, to taste

,

Pepper, to taste

,

For the Eggs

,

8 eggs

, ,

1 tablespoon turmeric

,

2 tablespoons butter

,

Pepper, to taste

For the Assembly

,

4 (8 ½-inch) flour tortillas

,

¼ cup green onions, chopped

,

¼ cup cilantro, chopped

Directions

For the Hash

  1. Preheat oven to 425 degrees F.
  2. In a large cast-iron skillet (oven safe), warm oil and butter over medium heat. Add onions and cook until translucent, about 6 minutes.
  3. Add garlic and spices and cook, stirring constantly, for one minute until fragrant. Add sweet potato and toss to coat. Salt and pepper to taste.
  4. Transfer oven safe skillet to oven and roast until cooked through, stirring occasionally, about 30 minutes.

For the Eggs

  1. In a large bowl, whisk together the eggs, LACTAID® Reduced Fat 2% Lactose-Free Milk and turmeric.
  2. Heat the butter over medium-low until foamy.
  3. Add the eggs and cook slowly, pulling a spatula from the outside of the pan towards the center to make fluffy curds. When eggs are done set aside.

For the Assembly

  1. Lay a tortilla flat and layer it with eggs, hash, green onions and cilantro. Wrap and slice in half. Serve immediately.
